African plant species called Sweet Prayer Plant (Thaumatococcus Daniellii) is well-known for being a natural source of thaumatin, a highly sweet protein that has potential for use in the creation of artificial sweeteners.
Raw or cooked seed is consumed. The taste buds are affected when the raw seed is bitten, making sour foods and beverages taste sweet for about an hour afterward. Additionally, the seeds are used to sweeten tea, fruit, and bread.
Thaumatin, a sweet-tasting protein found in the seed’s aril, can be used in place of sugar in low-calorie diets and beverages. It also “sweetens” things that are often sour or bitter because of the lingering sweet aftertaste. The sweetest known natural and manufactured chemical is thaumatin, which is 2,000–3,000 times sweeter than sucrose.
