White cacao, mocambé, and theobroma Bicolor is a short, slender, evergreen tree that is native to South America and grows quickly in Brazil, Peru, Ecuador, and Colombia. Panama to Mexico is in America. Fruit can be consumed raw, has a flavour that is sweet and pleasant but not overly acidic, and can be used to produce desserts and hydrating drinks.
The seeds are used into cocoa powder or used to make almonds. The seeds of plants in this genus are generally an excellent source of protein (about 15%), carbohydrates (15%), and oil (about 50%). Along with a volatile oil, the stimulant alkaloids caffeine and theobromine are also present. Although this species’ seeds contain little theobromine, they are a significant source of cacao butter.
